Vegan chicken alternatives can be tasteless and boring. However, with the addition of this creamy lemon sauce, you can easily transform your vegan chicken into a zingy taste sensation.
This lemon ‘chicken’ dish can be served with a whole host of different side dishes. My favourites include vegan pesto pasta and grilled asparagus or a broccoli potato salad with garlic vinigarette.
Vegan lemon chicken ingredients
- 1 packet of vegan chicken alternative
- 50 g flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp vegan margarine
- 1 tbsp olive oil
- 2 cloves garlic
- 1 vegetable stock cube
- 100ml water
- 1 lemon
- A sprig of fresh parsley
- 1 tbsp nutritional yeast
How to make vegan lemon chicken
Step One: Take a large bowl and add the flour, salt and pepper. Add the chicken-style pieces and stir until they are completely coated.
Step Two: Heat a large frying pan over a medium heat and add the olive oil and margarine. Finely chop the garlic and add it to the pan.
Step Three: Shake the excess flour from the vegan chicken and add it to the pan. Cooking times vary depending on the brand of chicken alternative used and whether it’s fresh or frozen. Cook for the time specified on the packet.
Step Four: Dissolve the stock cube in 200ml of boiling water. Squeeze the juice from two lemons. Add the vegetable stock and the lemon juice to the pan with the vegan chicken and simmer on a low heat for three minutes more.
Step Five: Remove from the heat and serve with your choice of accompaniments.
How to store
If cooking for one person, to avoid wasting any food you can keep half of this dish in the fridge to eat another day. Simply place it in an airtight container and you can store in the fridge for up to three days or in the freezer for up to three months. To reheat, simply place it in the microwave.

There are many vegan chicken brands and I usually buy whatever is on offer in my local supermarket that week. Some of my favourotes include Oumph! The Chunk (frozen), Quorn vegan fillets (frozen), Vivera Plant Chicken Pieces (fresh) and Like Meat Chicken Bites (fresh).

As well as fake chicken, you could easily make this dish using soya-based meat alternatives like tofu or tempeh.
